Bone-In Pork Chops with Gingered Peach BBQ Sauce
- Gingered Peach BBQ Sauce
- 1 cup Kraft BarBQ Sauce
- 1/4 cup peach preserves
- 1/4 cup honey
- 3/4 tsp. grated gingerroot
- 3/4 tsp. hot pepper sauce
- Pork Chops Safeway 1 lb For $1.99 thru 02/09
- 48 each bone-in pork chops (4 oz./115 g) Whole Foods 1 lb For $5.99 thru 02/09
- 3/4 cup canola oil
- 3 qt. seedless watermelon, peeled, diced
- 3 qt. grape tomatoes, halved
- 3 qt. torn fresh basil leaves
- 1-1/2 cups Kraft Balsamic Vinaigrette Dressing
- Gingered Peach BBQ Sauce: Combine all ingredients in saucepot.
- Bring to simmer on medium heat, stirring occasionally.
- Remove from heat; set aside.
- For each serving: Brush 2 chops with 1/2 Tbsp.
- (7 mL) oil.
- Place on a sizzle platter.
- Bake in 450 degrees F (230 degrees C) standard oven 5 min.
- Brush chops with 1 Tbsp.
- (15 mL) Peach BBQ Sauce.
- Bake an additional 5 to 8 min.
- or until sauce is caramelized and internal temperature reaches 145 degrees F (63 degrees C).
- Remove from oven; let rest 3 min.
- Meanwhile, toss 1/2 cup (125 mL) each of the watermelon, tomatoes and basil with 1 Tbsp.
- (15 mL) dressing.
- Plate 2 pork chops with 1-1/2 cups (375 mL) watermelon salad on the side.
