Bone-In Pork Chops with Gingered Peach BBQ Sauce

  1. Gingered Peach BBQ Sauce: Combine all ingredients in saucepot.
  2. Bring to simmer on medium heat, stirring occasionally.
  3. Remove from heat; set aside.
  4. For each serving: Brush 2 chops with 1/2 Tbsp.
  5. (7 mL) oil.
  6. Place on a sizzle platter.
  7. Bake in 450 degrees F (230 degrees C) standard oven 5 min.
  8. Brush chops with 1 Tbsp.
  9. (15 mL) Peach BBQ Sauce.
  10. Bake an additional 5 to 8 min.
  11. or until sauce is caramelized and internal temperature reaches 145 degrees F (63 degrees C).
  12. Remove from oven; let rest 3 min.
  13. Meanwhile, toss 1/2 cup (125 mL) each of the watermelon, tomatoes and basil with 1 Tbsp.
  14. (15 mL) dressing.
  15. Plate 2 pork chops with 1-1/2 cups (375 mL) watermelon salad on the side.
