Pop in the Mouth Meatballs

  1. Coat a 10 by 15 inch jelly roll pan with cooking spray.
  2. In a large bowl, combine ground turkey, scallions, bread crumbs, currants, parsley, mint, egg white, salt, cinnamon, and cayenne.
  3. Mix lightly to combine.
  4. Shape in to 1 inch balls and place on prepared pan.
  5. Refrigerate 1 hour.
  6. Preheat oven to 350.
  7. Bake meatballs for 10 minutes.
  8. Transfer pan to broiler and broil 3-4 inches from the heat for 3-5 minutes, until lightly browned.
