Salmon With Caramelized Onion and Strawberry Relish
- 1 large sweet onion, sliced in 1/2 rounds
- 1 cup white balsamic vinegar
- 1 pint strawberry, sliced
- 2 lbs salmon fillets
- 2 teaspoons olive oil
- 1 teaspoon butter
- In a saute pan melt the butter and oil and cook onion on low, stirring occasionally until caramelized.
- This can take a very long time (45mins or so).
- While you are doing this, reduce vinegar in a small saucepan to 1/4 cup or less.
- It should be syrupy and able to coat the back of a spoon.
- Cut the salmon into 4 equal portions.
- And score the skin side with a sharp knife.
- Remove onions from pan and turn heat up to medium high.
- Add more oil if necessary.
- No need to wash the pan.
- Add salmon skin side up and sear for 2-4mins.
- Flip the salmon and cook skin side down for 3-5mins depending on how thick your filets are.
- Stir onions, strawberries and balsamic together and serve over the salmon.
