Blackened Grouper Recipe

  1. Combine flour and spices and mix well.
  2. Brush fillets with butter, then rub spice mix all over fillets.
  3. Heat oil in iron frying pan over high heat till very warm.
  4. Add in fillets and cook 2 to 3 min per side or possibly till fish is opaque and beginning to flake when tested.
  5. Serve immediately.
  6. Notes: Start with a really warm frying pan.
  7. The fish will sizzle immediately and will result in a very crisp, dark coating.
