Blackened Grouper Recipe
- 1 Tbsp. all-purpose flour
- 1 tsp onion pwdr
- 1/2 tsp powdered thyme
- 1/2 tsp powdered oregano
- 1/2 tsp salt
- 1/4 tsp chili pwdr
- 1/4 tsp freshly grnd white pepper
- 1/4 tsp freshly grnd black pepper
- 1/4 tsp freshly grnd paprika
- 1 lb Red Grouper fillets, skinned
- 4 Tbsp. melted butter
- 1 Tbsp. oil, for frying
- Combine flour and spices and mix well.
- Brush fillets with butter, then rub spice mix all over fillets.
- Heat oil in iron frying pan over high heat till very warm.
- Add in fillets and cook 2 to 3 min per side or possibly till fish is opaque and beginning to flake when tested.
- Serve immediately.
- Notes: Start with a really warm frying pan.
- The fish will sizzle immediately and will result in a very crisp, dark coating.
