Chicken & Pesto Pasta
- 1 pound Ziti Pasta
- 3/4 cups Pasta Water
- 2 Tablespoons Olive Oil
- 2 cups Sliced Mushrooms
- 1 Shallot, Diced
- Salt And Pepper
- 1 pound Chicken Breast
- 1 cup Pesto Sauce
- 1/4 cups Shredded Parmesan Cheese
- Bring a large pot of water to a boil, salt water and add pasta.
- Cook until al dente, about 12 minutes.
- Drain pasta, keeping 3/4 cup of the cooking water to use for later.
- Pour drained pasta back into cooking pot and set aside.
- Meanwhile, in large heated skillet add olive oil, followed by mushrooms and shallots.
- Season with salt and pepper.
- Saute until tender, about 10 minutes.
- Cook chicken either on the stove top or in the oven.
- When done, give it a rough chop.
- Combine the cooked pasta, pesto sauce, mushroom mixture, chopped chicken and the pasta water.
- Mix well, adding Parmesan cheese at the end.
