Mandarin Orange Spinach Salad Recipe

  1. Combine dressing ingredients, shake well.
  2. Chill 1 hour to blend flavors.
  3. In heavy skillet cook almonds and sugar over medium heat till sugar melts and coats almonds, stirring frequently.
  4. Pour into foil to cold.
  5. Break apart.
  6. In large bowl, combine salad ingredients except oranges.
  7. Toss.
  8. Add in almonds and oranges, toss gently.
  9. Pour dressing over salad.
  10. Toss.
  11. Makes 10 (1 c.) servings.
  12. Each servings 160 calories, 11 grams fat, no cholesterol.
