Apple And Green Pear Chutney Recipe
- 2 c. Apple cider vinegar
- 3 c. Sugar, brown, dark
- 10 lrg Apple, tart, peeled, cored, & coarsely minced
- 5 x Pear, green hard, peeled, cored, & coarsely minced
- 2 lrg Bell pepper, red, cleaned & coarsely minced
- 1 c. Currants, dry
- 1 c. Onion, coarsely minced
- 1/2 c. Ginger, fresh, peeled & finely minced
- 2 lrg Lemons, seeded & finely minced (include rind)
- 2 tsp Mustard seeds, whole
- 1 Tbsp. Mint, fresh, coarsely minced
- 1 Tbsp. Salt
- In a large, nonreactive pot, bring vinegar and brown sugar to a boil over high heat.
- Add in all remaining ingredients and turn heat to a simmer.
- Cook, stirring occasionally, till thickened, about 45 min.
- Pour into sterilized jars and seal.
