Spicy Stewed Okra

  1. Brown bacon in large skillet on medium-high heat.
  2. Add chopped onion, bellpepper, and smashed garlic.
  3. Saute until onions become translucent.
  4. Stir in okra pieces, both cans of undrained Rotel, salt, and pepper (to your liking) until well incorporated.
  5. Simmer on medium heat for about 15-20 mins or until liquid has mostly evaporated.
  6. Tip: Do not over stir as soft okra will break apart and create mush.
