Tequila Chicken with Watermelon Salsa

  1. Prepare Chicken Marinade: In a small bowl, combine 1/4 cup olive oil, 1/4 cup lime juice, tequila, oregano, 1 teaspoon cumin, garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper.
  2. Place chicken breasts in the marinade.
  3. Soak thoroughly.
  4. Prepare the Watermelon Salsa: As chicken marinates, in a large bowl, combine watermelon, peach, tomatillos, chiles, 1 tablespoon fresh lime juice, 1 tablespoon olive oil, 1/2 teaspoon ground cumin, 1/2 teaspoon salt, onion, and cilantro.
  5. Mix thoroughly.
  6. Prepare an outdoor grill or a stove-top grill pan.
  7. Remove chicken from marinade and grill, skin-side down, turning once 10 to 12 minutes, until thickest parts are just cooked through.
