Fish Fillets Veronique
- 1 c. seedless grapes
- 2 Tbsp. white wine
- 1 Tbsp. lemon juice
- 2 lb. fish fillets (flounder, sole or snapper)
- 1 tsp. grated lemon peel
- 1 Tbsp. lime juice
- 1 Tbsp. fresh ginger root, julienned in small strips
- 1/2 medium bell pepper, julienned
- 1/4 tsp. salt
- fresh ground pepper to taste
- fresh parsley or coriander (for garnish)
- lemon and/or lime wedges (for garnish)
- Slice the grapes in half and place them in a bowl with the wine and the lemon juice, tossing gently.
- Line a broiling pan with foil and arrange the fish in the pan.
- Sprinkle the lemon peel and lime juice over the fish.
- Top with the ginger, bell pepper and seasoning, except for the garnish.
- Broil the fish for about 5 minutes, until the fillets begin to turn golden.
- Pour the grape-wine mixture over the fish arranging the grapes cut-side down.
- Broil a couple more minutes, until fish flakes easily with a fork.
- Serve with the garnishes.
- Yield:
- 6 servings.
