Ranch Shrimp Skewers
- 1 package (1 Ounce Package) Ranch Dressing Mix
- 3 Tablespoons Olive Oil
- 12 ounces, weight Small Red Potatoes
- 24 whole Grape Tomatoes
- 1 pound Shrimp (washed, Peeled And Deveined)
- 2 whole Large Red Onions
- 20 whole Bamboo Skewers, Soaked In Water As Per Package Instructions
- In a large bowl mix the dressing mix and oil.
- Cut potatoes into small chunks.
- Toss the potatoes, tomatoes and shrimp well in the dressing mix.
- Cut onions into chunks.
- Do not separate the layers.
- Do not toss the onion chunks in the dressing mixture (they will all fall apart).
- Prepare 8 potato skewers alternating potatoes and onions.
- Prepare 12 shrimp skewers with 2 tomatoes each and dividing the shrimp.
- Heat the grill to medium-low.
- Add a sheet of foil over the hot grates and add the potato skewers.
- Cook the potato skewers on top of the tin foil, turning, until potatoes are cooked (about 30 minutes).
- Then lower the heat to low and add the shrimp skewers to the grill.
- Cook the shrimp skewers about 10 minutes, turning 2 or 3 times, until the shrimp are cooked.
- Remove all of the skewers from the grill and serve.
