Brawn Recipe
- 2 x Pig's trotters
- 1 1/2 lb Knuckle of veal
- 1 x Shin of beef
- 4 x Bay leaves
- 6 x Cloves
- 1/2 tsp Peppercorns
- 1/2 tsp Whole allspice
- 1 dsh Salt
- 1/2 c. Vinegar
- Halve pig's trotters and meat, put in saucepan and just cover with water, also add in bay leaves, cloves, pepper-corns, allspice and salt.
- Let boil for 3 - 4 hrs.
- When cooked take out meat and chop finely, remove all bones, strain liquid into a basin, add in minced meat and vinegar, pepper and salt to taste.
- Put over fire and let come to boil.
- Pour into basins to set.
