Brawn Recipe

  1. Halve pig's trotters and meat, put in saucepan and just cover with water, also add in bay leaves, cloves, pepper-corns, allspice and salt.
  2. Let boil for 3 - 4 hrs.
  3. When cooked take out meat and chop finely, remove all bones, strain liquid into a basin, add in minced meat and vinegar, pepper and salt to taste.
  4. Put over fire and let come to boil.
  5. Pour into basins to set.
