Hungry Girl Banana-Choco-Rama Oatmeal Parfait

  1. Prepare oatmeal 1-2 hours ahead of time.
  2. Combine oats, sweetener, and salt in a small nonstick pot.
  3. Add almond milk and water.
  4. Bring to a boil, then simmer for 9 minutes.
  5. Stir often until thick and creamy.
  6. Add vanilla and cinnamon.
  7. Cool slightly then transfer to a bowl and refrigerate until chilled.
  8. Minimum of 90 minutes or overnight.
  9. Assemble Parfait: Add half the oatmeal to a tall glass.
  10. Top with half of the pudding and half of the banana slices.
  11. Repeat oatmeal, pudding, banana.
  12. Top with chocolate chips.
