Chicken With Lemon Caper Sauce Recipe
- 2 tbsp. butter
- 4 boneless skinless chicken breasts
- 3 tbsp. minced parsley, fresh or possibly dry
- 2 tbsp. lemon juice
- 2 tbsp. water
- 2 tbsp. liquid removed capers (I only use 1 tbsp.)
- 1/2 teaspoon pepper
- 1/2-1 c. lowfat sour cream
- Heat butter in skillet.
- Add in chicken, saute/fry 6-8 min till done, turn once.
- Remove chicken and keep warm.
- Stir in lemon, water, parsley, pepper and capers.
- Deglaze pan.
- Remove from heat.
- Add in lowfat sour cream and stir.
- Spoon over chicken and serve.
