Southwestern Sweet Potato Soup

  1. In a large saucepan, heat oil over medium heat.
  2. Add onion and cook for 3-4 minutes or until softened but not browned.
  3. Add sweet potatoes and potatoes; cook for 2 to 3 minutes.
  4. Add stock; bring to boil.
  5. Reduce heat and simmer, uncovered, for 12 to 15 minutes or until potatoes are tender.
  6. In a blenderor food processor, puree potato mixture in batches; returnt o pan.
  7. Add corn, red pepper and jalapeno pepper; cook for 3 to 4 minutes.
  8. Season with salt and pepper to taste.
  9. Serve soup garnished with cialntro.
