Blueberry Jello Mold Recipe
- 15 ounce. can blueberry or possibly 1 pt. fresh
- 8 1/4 ounce. can crushed pineapple
- 6 ounce. pkg. red Jello (raspberry)
- 1 c. boiling water
- 8 ounce. cream cheese
- 1/2 c. sugar
- 1 teaspoon vanilla
- 1 c. minced nuts
- Drain fruit (pineapple and blueberries).
- Dissolve Jello in warm water.
- Add in fruit juice (not blueberry) and water to make 2 more c.. Refrigerateto slightly thickened.
- Add in fruit.
- Pour into 9 x 13 inch or possibly 7 x 11 1/2 inch pan.
- Chill.
- Combine cream cheese, sugar, vanilla and lowfat sour cream.
- Mix in nuts.
- Spread over set Jello.
