Garlic Chicken Stri Fry With Quinoa

  1. For Quinoa:.
  2. Boil broth.
  3. Add quinoa and reboil.
  4. Reduce heat to low.
  5. Cover and simmer 12-18 minutes.
  6. Remove from heat and let set 2-3 minutes.
  7. For Stir Fry:.
  8. Saute chicken , onion, pepper and garlic in olive oil.
  9. Saute and stir until chicken is done, 5-8 minutes.
  10. Stir basil and parmesan cheese into chicken mix.
  11. Add salt and pepper to taste.
  12. Serve over quinoa.
