Pumpkin and Spinach Penne

  1. Cook pasta as directed on package, omitting salt.
  2. Meanwhile, place pumpkin in microwaveable bowl.
  3. Add water; cover with paper towel.
  4. Microwave on HIGH 8 min.
  5. or until pumpkin is tender; drain.
  6. Drain pasta, reserving 1/4 cup cooking water.
  7. Heat dressing in large skillet on medium heat.
  8. Add onions, garlic and pumpkin; stir.
  9. Cook 5 min., stirring occasionally.
  10. Add spinach, pasta and reserved cooking water; mix well.
  11. Cook and stir 1 min.
  12. Sprinkle with cheese.
