Tar Heel Barbecued Baked Beans
- 1 pound pinto beans dried
- 3 each onions chopped, thinly sliced
- 2 large green bell peppers chopped
- 2 each garlic cloves mashed
- 2 tablespoons peanut oil
- 3 tablespoons prepared mustard
- 2 tablespoons chili powder
- 1 x salt
- 8 ounces tomato sauce
- 1/4 cup chili sauce
- 1/2 cup apple cider vinegar
- 1/4 cup vinegar
- 1 dash red hot pepper sauce
- Soak and cook beans.
- Drain, reserving 2 cups of the broth.
- Cook chopped onions, green peppers, and garlic in peanut oil Add remaining ingredients, except sliced onion, and including beans and broth.
- Pour into a large, oiled casserole.
- Place the slices of onion evenly over the top and bake 45 to 60 minutes in 350F (180C).
