Minted Cheesecake Bars
- 1/3 cup Land O Lakes Butter, melted
- 6 large (1 cup) chocolate graham crackers, finely crushed
- 1/2 cup sugar
- 2 (8-ounce) packages cream cheese, softened
- 2 Land O Lakes Eggs
- 3/4 teaspoon peppermint extract
- 1 to 2 drops green food color, if desired
- 1/4 cup semi-sweet chocolate chips
- 1/2 teaspoon shortening
- Heat oven to 350F.
- Combine melted butter and graham cracker crumbs in bowl.
- Press crumb mixture evenly onto bottom of 8-inch square baking pan.
- Set aside.
- Combine all filling ingredients in bowl.
- Beat at medium speed, scraping bowl often, until smooth.
- Spread filling over crust.
- Bake 35-40 minutes or until filling is set.
- Cool completely.
- Melt chocolate chips and shortening in 1-quart saucepan over low heat, stirring constantly, 2-3 minutes or until smooth.
- Drizzle over cooled bars.
- Refrigerate until firm.
- Cut into bars.
- Store refrigerated.
