Caramelized Onion, Roasted Bell Pepper and Goat Cheese Flatbread
- 1 pound pizza dough store-bought or homemade, enough for 2 people, or as needed
- 2 tablespoons olive oil
- 2 large red onion peeled, halved and thinly sliced
- 1/2 cup goat crumbled
- 1/2 each sweet red bell peppers, roasted slice into 1/4-inch thick
- 2 clove garlic minced
- Put the pizza stone in the oven if you have one, and preheat the oven to 450F (230C).
- Heat the olive oil in a large nonstick skillet on medium heat until hot.
- Add the onions, stirring occasionally, and cook until the onions are very soft and caramelized, about 15 minute.
- Divide the pizza into two equal portions, shape each portion into about 9 by 6-inch rectangular.
- Spread equal amount of caramelized onions over each dough.
- Top each with roasted bell pepper strips and 1/4 cup of goat cheese.
- Bake until the shell is golden brown and the cheese starts to become brown, 12 to 15 minutes.
- Cool slightly and serve warm.
