Cranberry Orange Muffins

  1. preheat oven to 400F.
  2. Grease bottoms only of 12 muffin cups or line with paper baking cups.
  3. Combine orange zest and white sugar in a small bowl and set aside.
  4. In a medium bowl combine flour, baking powder, & salt.
  5. Combine milk, oil, egg and flavoring.
  6. Add sugar/zest and cranberries to dry ingredients.
  7. Stir in liquids just until dry ingredients are moistened (batter will be lumpy).
  8. Fill greased/lined muffin cups 2/3 full.
  9. Bake at 400F for 20-25 minutes or until toothpick inserted in center comes out clean.
  10. Cool slightly and enjoy.
