Cranberry Orange Muffins
- 2 cup all purpose flour
- 1/2 cup white sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 3/4 cup milk
- 1/3 cup veggie oil
- 1 egg
- 1 tbsp orange zest
- 1 tsp orange flavoring
- 1 cup fresh cranberries
- preheat oven to 400F.
- Grease bottoms only of 12 muffin cups or line with paper baking cups.
- Combine orange zest and white sugar in a small bowl and set aside.
- In a medium bowl combine flour, baking powder, & salt.
- Combine milk, oil, egg and flavoring.
- Add sugar/zest and cranberries to dry ingredients.
- Stir in liquids just until dry ingredients are moistened (batter will be lumpy).
- Fill greased/lined muffin cups 2/3 full.
- Bake at 400F for 20-25 minutes or until toothpick inserted in center comes out clean.
- Cool slightly and enjoy.
