Braised Leeks and Mushrooms
- 1/4 cup sherry dry
- 1 teaspoon olive oil
- 5 cups leeks thinly sliced
- 1 cup mushrooms, shiitake thinly sliced
- 1 teaspoon orange juice fresh
- 1/2 teaspoon orange zest grated
- 1 tablespoon apple cider vinegar
- 1 x salt and black pepper to taste
- In a large skillet, over medium heat, combine sherry and oil.
- Heat to simmering.
- Add leeks, stirring frequently for 3 minutes.
- Add mushrooms and saute for 5 minutes.
- Stir in orange juice, peel and vinegar.
- Remove from heat.
- Add seasonings and serve warm.
