Braised Leeks and Mushrooms

  1. In a large skillet, over medium heat, combine sherry and oil.
  2. Heat to simmering.
  3. Add leeks, stirring frequently for 3 minutes.
  4. Add mushrooms and saute for 5 minutes.
  5. Stir in orange juice, peel and vinegar.
  6. Remove from heat.
  7. Add seasonings and serve warm.
