Chicken and Pumpkin Amakarani
- 200 g Chicken breast
- 300 g Kabocha Pumpkin
- 200 g Daikon radish
- 1 Tbsp Sugar
- *30 ml Vinegar
- *50 ml Soy sauce
- *50 ml Honey
- *50 ml Sake
- *100 ml Water
- 2 tsp Olive oil
- Cut the chicken into bite size pieces.
- Heat the pot with 2 tsp of olive oil.
- Stir fry the chicken on medium heat.
- Season with a pinch of salt.
- Cut the pumpkin and daikon into bite size pieces.
- Microwave them for 2 min on 600W or until they become lightly soft.
- Then add them into the pot to cook together.
- When the chicken has nearly cooked, add all the * ingredients and put the lid on to simmer for about 15 min on low to medium heat.
- Occasionally rock the pot to help mix everything and make sure the sauce hasn't evaporated so it doesn't burn.
- When the sauce is almost gone and all the food has cooked, sprinkle in the sugar and shake the pot a little to mix again.
