Easy Sweet Potato Cake
- 300 grams Sweet potato
- 100 grams Milk
- 20 grams Cake flour
- 5 grams Baking powder
- 2 Eggs
- 20 grams Butter
- 20 grams Vegetable oil
- 35 grams Sugar (I used light brown sugar)
- 1 tbsp Honey
- 1 just 1 dash if you have it Cinnamon Sugar
- Cut the sweet potatoes into cubes and soak in water.
- Put the marked sweet potatoes and milk into a pot and boil on medium-low heat.
- Be careful not to burn them.
- When they become soft, roughly smash while still in the pot.
- Let cool.
- Mix in the marked butter, oil, sugar, and honey.
- Then mix in the egg in two batches.
- When it its mixed in, add the flour and baking powder and mix it in quickly.
- Pour into the molds and sprinkle cinnamon sugar.
- Bake for about 20 minutes at 180 degrees C My oven is on the stronger side so I only bake for 18 minutes.
- I didn't use baking powder in the cakes in the photo.
