Cheesy Vegetarian Chicken and Rice
- 1 cup Rice (I Use Basmati, But Other Rices Would Probably Work Fine)
- 1- 1/4 cup Water
- 1 box George Washington Golden Broth Mix (1 Ounce Box)
- 1 can FriChik (vegetarian Chicken Substitute, 13 Ounce Can)
- 1/2 blocks Velveeta Cheese (16 Ounce Block)
- 1 can Rotel (10 Ounce Can)

- Mix together rice, 1 1/4 cup water, and George Washington Golden Broth Packet and cook in rice cooker for 40 minutes or until rice is done.

- Slice up FriChik pieces into a medium dice and set aside.
- 3.
- Cube the half block of Velveeta and set aside.
- 4.
- Combine rice mixture, can of Rotel, FriChik, and Velveeta into microwave-safe covered casserole dish, stirring together after each addition.
- 5.
- Place casserole dish in microwave, set time for 2 minutes.
- After the two minutes stir together again, then put back in microwave for another 2 minutes.
- Stir after 2 minutes are up, cheese should be completely melted and dish should be ready.
- If not melted, it can be returned to microwave and you can continue cooking/stirring at these intervals until the Velveeta is completely melted and everything is combined.
