Zuppa di Legumi Recipe
- 500 g. mixed dried legumes and cereals (beans, pea, lentils, spelt, barley, buckwheat)
- 1 big red onion
- 500 g. tomatoes
- Rosemary
- Extra virgin olive oil
- Salt and pepper
- Red pepper
- Chop the onion, the rosemary, red pepper, and let brown in a pan with olive oil.
- Add the legumes and let the flavors blend.
- Add the tomatoes, salt, pepper, and stir.
- All 2 liters of water and let gently cook for about 2 hours.
- Serve with olive oil and grated parmesan.
