Crockpot Bean Soup
- 32 ounces tomatoes
- 10 ounces chicken broth one can
- 2 cups water
- 1 cup white wine
- 1 1/2 cup onions chopped
- 4 each carrots sliced
- 3 each celery stalks sliced
- 1/2 teaspoon garlic powder
- 1 teaspoon black pepper
- 2 teaspoons paprika
- 2 teaspoons parsley leaves
- 2 cups ham diced
- 1 pound beans, dried assorted
- Soak beans overnight, drain, rinse and drain again OR cover beans with 6 to 8 cups water and covering with vented saran wrap - cook in microwave 10 minutes - let sit on counter 1 hour).
- Combine all ingredients in a crock pot and cook 3 to 4 hours on high or all day on low.
- Simple and simply delicious!
- The flavor is enhanced by allowing the soup to sit refrigerated for 1 to 2 days.
