Sweet and Sour Dipping Sauce

• 60 ml white vinegar
• 100 g caster sugar
• 1 12 tablespoons water
• 14 lebanese cucumber, seeded, chopped finely

1. Combine vinegar, sugar and the water in a small saucepan; stir until sugar is dissolved.
2. Boil, uncovered for 3 minutes, cool.
3. Transfer to serving bowl and stir in cucumber.
