Strawberry Daiquiri Pie

  1. To prepare crust, combine crumbs, margarine, and sugar in a mixing bowl.
  2. Press mixture firmly in a pie pan.
  3. Spread crumb mixture evenly in pie pan.
  4. Chill 1 hour, or until firm.
  5. Or, bake in a 375F (190C).
  6. oven for 10 minutes or until edges are brown.
  7. Cool on rack before filling.
  8. To prepare filling, combine cream cheese, sweetened condensed milk, daiquiri mix, rum extract, and food coloring in a mixing bowl.
  9. Mix well.
  10. Fold in whipped topping.
  11. Pour into crust.
  12. Chill or freeze four hours or until firm.
