Strawberry Daiquiri Pie
- 1 1/2 cups graham cracker crumbs
- 1/4 cup margarine melted
- 3 tablespoon sugar granulated
- 8 ounces cream cheese
- 14 ounces milk, low fat, sweetened, condensed
- 23 cup strawberry daquiri
- 1/2 teaspoon rum extract
- 1 cup whipped topping, prepared
- To prepare crust, combine crumbs, margarine, and sugar in a mixing bowl.
- Press mixture firmly in a pie pan.
- Spread crumb mixture evenly in pie pan.
- Chill 1 hour, or until firm.
- Or, bake in a 375F (190C).
- oven for 10 minutes or until edges are brown.
- Cool on rack before filling.
- To prepare filling, combine cream cheese, sweetened condensed milk, daiquiri mix, rum extract, and food coloring in a mixing bowl.
- Mix well.
- Fold in whipped topping.
- Pour into crust.
- Chill or freeze four hours or until firm.
