Madrid Style Lentil Soup Recipe
- 1 lg. onion, minced
- 1 canned whole pimento, liquid removed and minced
- 1 green pepper, cleaned out and minced
- 4 tbsp. extra virgin olive oil
- 2 tbsp. flour
- 1 (16 ounce.) can (2 c.) tomatoes, cut up
- 3 carrots, peeled and minced
- 2 c. lentils (don't presoak)
- 1 teaspoon salt
- 8 c. water

- In a large kettle, cook onions, pimento and green pepper in extra virgin olive oil till soft.
- 2.
- Stir in flour.
- Add in tomatoes, carrots, lentils, salt and water.
- Cover and simmer over very low heat for about 2 hrs.
- Serves 12.
