Tuscan Bean and Pasta Toss
- 6 cups hot cooked short pasta such as fusilli or 6 cups penne
- 4 cups baby packed spinach
- 1 (540 ml) can six bean blend, drained and rinsed
- 13 cup pesto sauce
- 14 cup sun-dried tomato, blanched and thinly sliced
- 1 teaspoon grated lemon zest
- 1 tablespoon fresh lemon juice
- 14 teaspoon hot pepper flakes (optional)
- 12 cup Italian cheese blend, shredded
- Toss hot pasta with spinach, beans, pesto, sundried tomatoes, lemon zest, lemon juice and hot pepper flakes, (if using).
- Transfer to a serving bowl, and sprinkle with shredded cheese.
- Serve immediately.
