Creamed Mashed Potatoes (From Instant)
- 3 cups water
- 1 cup milk
- 1 (7 5/8 ounce) package instant roasted garlic mashed potatoes (or add garlic powder to regular ones)
- 4 ounces cream cheese, cubbed
- 1 cup shredded Mexican blend cheese
- In large saucepan bring water and milk to rolling boil.
- Remove from heat and add the contents of both envelopes of instant potatos.
- Let stand 1 minute; whip with a fork.
- Place cream cheese in microwave (cover bowl) and heat at 70% power for 45 seconds.
- Stir into potatoes and transfer to a 1-qt baking dish; sprinkle with cheese.
- Broil 4" from heat for 3-4 minutes, until cheese is melted.
