Cheese Refrigerator Rolls
- 2 (1/4 ounce) packages dry yeast
- 12 cup lukewarm water
- 12 cup milk
- 12 cup butter
- 4 tablespoons sugar
- 1 teaspoon salt
- 3 eggs, well beaten
- 1 cup sharp cheddar cheese, grated
- 4 12 cups sifted flour (approximate)
- Mix yeast with water according to the package directions.
- Set aside.
- Scald milk and add butter and sugar.
- Cool to lukewarm.
- Add yeast mixture to milk, along with salt and eggs.
- Mix well.
- Add cheese and flour to make a soft dough.
- Turn out on a lightly floured board and knead until smooth.
- Place in a greased bowl, cover, and allow to rise in a warm place until double in bulk.
- Punch down.
- Grease with butter, cover, and store in the refrigerator.
- Before shaping into rolls, allow dough to stand for about 1 hour at room temperature.
- Make into rolls and place on a greased sheet pan.
- Allow to rise until double in bulk in a warm place.
- Bake at 375 degrees F for about 15 minutes, or until golden brown.
