Best Ever Carrot Cake Recipe
- 3 x Large eggs
- 1 1/2 c. sugar
- 1 1/8 c. oil
- 1 1/2 c. flour
- 1 1/2 tsp baking soda
- 1 1/2 tsp cinnamon
- 1 tsp salt
- 2 sm jars strained baby food carrots
- 1 x (#2) can crushed pineapple, liquid removed
- 3/4 c. raisins, sprinkled with a little flour
- 1/2 c. walnuts, minced
- 1 tsp vanilla
- Combine Large eggs, sugar and oil and beat well.
- Sift together flour, baking soda, cinnamon and salt and add in to egg mix.
- Add in all other ingredients and mix well.
- Pour into 9 x 13 inch pan and bake at 350 degrees.
- When cold, spread with icing or possibly serve with Cold Whip.
- Can also eat cake plain or possibly sprinkled with 10X sugar.
- -ICING:-
- 1 (8 ounce.)
- pkg.
- cream cheese, softened2 c. 10X sugar1 teaspoon vanilla2 Tbsp .
- butter, softenedDash of salt
- Cream together.
