Bibingka

  1. Squeeze liquid from grated cassava.
  2. Set aside.
  3. Beat eggs.
  4. Add sugar, salt and butter.
  5. Mix well.
  6. Stir in coconut milk, grated cassava and Pineapple.
  7. Pour into a greased 8" X 8" square pan.
  8. Bake in a preheated oven at 350oF for 55 minutes, or until light brown in color.
  9. Pour pure coconut milk on top.
  10. Bake for another 5 minutes, or until top becomes golden brown.
