Bibingka
- 3 cups cassava, grated
- 2 eggs
- 1 12 cups Equal sugar substitute
- 34 tablespoon iodized salt
- 1 12 tablespoons butter
- 1 12 cups coconut milk
- 439 g pineapple
- 13 cup coconut milk
- Squeeze liquid from grated cassava.
- Set aside.
- Beat eggs.
- Add sugar, salt and butter.
- Mix well.
- Stir in coconut milk, grated cassava and Pineapple.
- Pour into a greased 8" X 8" square pan.
- Bake in a preheated oven at 350oF for 55 minutes, or until light brown in color.
- Pour pure coconut milk on top.
- Bake for another 5 minutes, or until top becomes golden brown.
