Stuffed Spicy Red Pepper with Quinoa, Garbanzo Beans and Fresh Garden Peas

  1. Cook quinoa per package instructions.
  2. Cut the pepper in half lengthwise and take out seeds.
  3. Set pepper halves aside.
  4. Preheat oven to 350 F.
  5. In a large bowl mix together chopped scallions, peas, quinoa, garbanzo beans, salsa, Sriracha sauce, shredded Mexican cheese, salt and pepper (to taste).
  6. Stuff peppers with mixture, put them in a baking dish and bake at 350 F for 30-40 minutes.
  7. Enjoy!
