Stuffed Spicy Red Pepper with Quinoa, Garbanzo Beans and Fresh Garden Peas
- 1 cup Quinoa
- 1 whole Red Pepper
- 1 whole Scallion, Chopped (white And Light Green Parts)
- 1/2 cups Fresh Garden Peas
- 1/2 cups Garbanzo Beans(canned)
- 1/4 cups Your Favorite Salsa
- 1 Tablespoon Sriracha Sauce
- 1/2 cups Mexican Shredded Cheese
- Salt And Pepper
- Cook quinoa per package instructions.
- Cut the pepper in half lengthwise and take out seeds.
- Set pepper halves aside.
- Preheat oven to 350 F.
- In a large bowl mix together chopped scallions, peas, quinoa, garbanzo beans, salsa, Sriracha sauce, shredded Mexican cheese, salt and pepper (to taste).
- Stuff peppers with mixture, put them in a baking dish and bake at 350 F for 30-40 minutes.
- Enjoy!
