Chickpea Falafel sig/*ari*
- 150 grams dried chick-peas
- 1 large onion ,roughly chopped
- 2 clove garlic,roughly chopped
- 4 tbsp roughly chopped parsley
- 1 tsp cumin seeds ,crushed
- 1/2 tsp baking powder
- 1 tsp coriander seeds crushed
- 1 dash vegetable oil for deep frying
- 1 pinch each salt and pepper
- to serve ,pitta bread ,salad and natural yogurt
- you can use broadbeans if you like
- soak dried beans over night in plenty of cold water.Drain and place in large pan.Boil rapidly gorcten minutes then simmer for 1-1 1/2 hours until soft.Drain and place in food processor add onion ,garlic,parsley,cumin seeds ,coriander seeds and baking powder.season with salt and pepper,process until you get a fine paste
- as soon as cool enough to handle shape into little balls and flatten slightly.Pour oil into deep pan ,when sizzling hot fry the falafel until golden ,drain and keep warm ,serve with warm pitta bread a salad and yogurt
