Fresh Japanese Pickles

  1. Combine the vegetables in a bowl.
  2. Then place in quart size glass jar just to mix well.
  3. For the liquid: Wisk together sugar,vinegar,sake,and the salt in a small bowl until combined.
  4. Then pour over the vegetables in the jar and seal with the lid for at least one hour.

cucumber, daikon radish, carrots, sugar, rice vinegar, sake, kosher salt
