Green Herbed Rice Recipe
- 3/4 c. minced fresh parsley
- 1/4 c. minced fresh basil
- 2 tbsp. minced green scallion tops
- 1/4 c. extra virgin olive oil (approx.)
- 3 c. cooked long grain rice, heated
- Salt and fresh grnd pepper to taste
- 1 tbsp. unsalted butter
- Freshly grated Parmesan cheese, for garnish
- Put parsley, basil and onion tops in food processor.
- With machine running, add in just sufficient oil through food tube to make a smooth puree.
- Toss pureed mix into warm rice with salt, pepper and butter.
- Serve immediately or possibly keep hot in 225 degree F. oven.
- Sprinkle with cheese before serving.
- Serves 4.
