Chop Suey Con Casuy

  1. Cut chicken breasts into paper thin slices.
  2. Combine with cornstarch, 1 tablespoon soy sauce, and egg white.
  3. Heat 1 tablespoon oil in skillet over medium high heat.
  4. Add vegetables and saute for 3 minutes.
  5. Add remaining soy sauce.
  6. Transfer to platter and set aside.
  7. Add remaining oil into same skillet and turn to high heat.
  8. Saute chicken for 2 minutes until cooked.
  9. Return cooked vegetables to skillet.
  10. Add hot broth.
  11. Stir to combine all ingredients thoroughly.
  12. Cook for one minute.
  13. Garnish with cashews.
