Indian Sauce Recipe

  1. Heat together in a sauce pan two ounces of butter, curry pwdr, a little saffron, one oz of flour.
  2. Moisten with stock, allow to reduce for a quarter of an hour.
  3. Strain through a sieve.
  4. A good curry pwdr, obtainable from dealers in exotics, contains coriander, cumin, black pepper, ginger, Cayenne pepper, cardamon and mustard.
