Irish Colcannon With Ham
- 5 whole Potatoes
- 3 Tablespoons Butter
- 1/2 cups Milk
- 1 dash Salt And Pepper
- 1 dash Olive Oil
- 1/2 heads Cabbage
- 1/2 whole Onion
- 1/2 cups Chicken Stock
- 1/2 cups Ham
- 1/2 cups Shredded Cheese
- 1.
- Boil potatoes in salt water until tender.
- Drain and mash with butter and milk.
- Season with salt and pepper.
- Set aside.

- Preheat oven to 400F.
- 3.
- In skillet, heat a splash of olive oil.
- 4.
- Saute cabbage and onion and add chicken stock.
- Cook until tender.
- 5.
- Add ham and heat through.
- 6.
- Fill small baking dish half full with the ham and cabbage mixture.
- 7.
- Top with mashed potatoes (NOTE: Way better if you pipe potatoes with a piping bag to create peaks).
- 8.
- Sprinkle with grated cheese.
- 9.
- Bake until cheese melts and potatoes are lightly browned.
