Bara Brith - Currant or Speckled Bread

  1. Warm milk.
  2. Mix yeast with a little sugar and warm milk.
  3. Rub fat into the flour, add the dry ingredients.
  4. Make a well in the centre and add yeast.
  5. Knead into a soft dough.
  6. Cover and allow to rise to twice its size in a warm place, for 1 1/2 hours.
  7. Turn on a floured board, put into greased tins and bake in a moderate oven.
  8. Slice thinly and butter.
