Guajillo-Roasted Chicken

  1. Heat oven to 425 degrees F.
  2. Mix first 3 ingredients until blended.
  3. Pour half over chicken in bowl; turn to evenly coat both sides of each piece.
  4. Stir honey into remaining dressing mixture.
  5. Cover rimmed baking sheet with foil; spray with cooking spray.
  6. Place chicken, skin sides up, on prepared baking sheet.
  7. Bake 30 to 35 min.
  8. or until chicken is done (165 degrees F), brushing with remaining dressing mixture for the last 10 min.
  9. Cut into smaller pieces to serve.
