Baked cod packets
- Cod or any white fish (4 nice size fillets) approx 2 lbs.
- 1 large onion - thinly sliced
- 1 fennel bulb - thinly sliced
- 1/2 cup pitted Kalamata olives - diced
- Olive oil
- salt
- pepper
- garlic powder
- Parchment paper
- Dice onion, fennel and olives.
- Create four seperate piles.
- At this point, keep the olives seperate from the onion and fennel.
- Tear off large peace of paper, place on the bottom 1 pile of the onion and fennel.
- Lay 1 cod or any white fish fillet on top.
- Then place olives on top of fish.
- Season with salt, pepper and garlic powder.
- Drizzle olive oil over the fish.
- Fold up parchment paper to create a packet that the fish will cook in.
- Repeat until all 4 packets are done.
- Place horizontally accross a large cookie sheet.
- Cook at 400 for approx 20 minutes.
