Lucious Apricot Bars

  1. Rinse apricots.
  2. Cover with water, boil 10 minutes, drain, cool and chop.
  3. Heat oven to 350u0b0.
  4. Grease an 8 inch square pan. With a pastry blender mix butter with sugar and the 1 cup flour until crumbly.
  5. Pack mixture into greased pan.
  6. Bake 20 minutes. In the meantime, prepare topping.
  7. In a mixing bowl, beat eggs; add brown sugar and salt.
  8. Sift flour with baking powder.
  9. Add to beaten eggs and sugar.
  10. Mix in vanilla, nuts and chopped apricots. Spread over baked layer.
  11. Bake for 30 minutes.
  12. Cool in pan and cut in bars.
  13. Roll in confectioners sugar
