Summer Celebration Salad
- 1 can (15 oz.) chickpeas (garbanzo beans), drained, rinsed
- 1 small jicama, peeled, cut into 1/2-inch cubes
- 3 green onions, sliced
- 1/4 cup KRAFT Zesty Italian Dressing
- 1 Tbsp. fruit seasoning with lime Target 1 lb For $2.99 thru 02/06
- 2-1/4 lb. seedless watermelon, rind removed and fruit cut into wedges, divided
- 1 large cucumber, thinly sliced
- 2 large tomatoes, thinly sliced King Sooper's 1 lb For $0.99 thru 02/09
- 2 Tbsp. KRAFT Grated Parmesan Cheese
- Combine chickpeas, jicama and onions in medium bowl; set aside.
- Pour dressing into blender.
- Add fruit seasoning and 1/2 cup of the watermelon; blend 1 min.
- or until smooth.
- Add to chickpea mixture; toss to coat.
- Arrange remaining watermelon wedges on serving platter along with the cucumbers and tomatoes.
- Top with the chickpea mixture; sprinkle with cheese.
- Serve immediately.
- Or, cover and refrigerate until ready to serve.
