Silky Beet Puree With Kohlrabi - Vegetarian / Vegan!

  1. Fill a medium sauce pan with water and set to boil.
  2. Wash, peel and slice the beets and kohlrabi.
  3. When water comes to a boil, add beets and kohlrabi.
  4. Reduce heat to medium and simmer until vegetables are soft.
  5. Drain vegetables and pour into a blender.
  6. Add vegetable stock, balsamic vinegar, salt and pepper.
  7. Blend until smooth.
  8. *If you do not have a blender you can return vegetables to the saucepan, add remaining ingredients and use an immersion blender instead.
