Cajun Eggplant Dressing Recipe

  1. Combine eggplant, water and 1t salt in a medium saucepan.
  2. Bring to a boil; reduce heat and simmer for 5 min.
  3. Drain.
  4. Coook celery, onions and green pepper in butter till tender crisp.
  5. Stir in eggplant, rice, crawfish, bread crumbs, parsley, garlic pwdr and pepper.
  6. Turn into a buttered 2-qt casserole.
  7. Sprinkle with paprika.
  8. Bake at 375 for 25 to 30 min.
